Since they ran out of letters last year and had to start over using movie stars just might work.

Oven Baked Orange Chicken

This is another entree you can prepare ahead, freeze and then set out to thaw a day or two before you want to have it. It will take about 45 minutes to bake if you have it well thawed out.

5 chicken breast, no skin, no bone
1/4 cup melted butter
3/4 cup fine dry breadcrumbs
1/2 cup flour
6 ounces orange juice, frozen concentrate — undiluted
1/4 teaspoon thyme
1/4 cup honey
1 teaspoon paprika

Place a sheet of waxed paper on a large cookie sheet. Brush chicken breasts
with butter. Combine orange juice and honey in a shallow dish. Mix bread
crumbs, flour, and seasonings in a separate bowl. Roll chicken in honey
mixture, then in crumbs. Place each coated chicken piece on the wax paper,
not touching other chicken parts. Drizzle remaining butter over chicken.
Flash freeze until firm then remove to freezer bag.

To serve: Place frozen chicken pieces on an oiled baking sheet. Preheat oven
to 375 degrees. Bake frozen chicken 30 to 45 minutes until thickest part is
no longer pink and juices run clear.

Broccoli soup – (Soupa broccolo)


I was trying to decide what to have with the Chicken Souvlaki I had planned for this evening and was going to make a broccoli dish. The weather is all rainy so I decide a soup would be nice. I am planning to make it without the wine and without the cream and use skim milk to make it lower in fat..Chicken Souvlaki Photo

INGREDIENTS
• 700 gr broccoli
• 1 medium onion
• 3 small potatoes
• 4 spoons white wine
• 3 cups chicken broth
• 2 spoons butter
• 1 lt milk
• 3 spoons cream
• Salt
• Pepper

Wash and clean broccoli, onion and potatoes. Melt the butter in a large saucepan and saute the broccoli, the onion and the potatoes for 7 – 10 minutes. Add the chicken broth, the wine, salt and pepper and let simmer for 20 minutes. Place the soup in a mixer and mash it. Put it back in the saucepan, add the milk and let it boil for 6 minutes. Serve hot with some cream on top and some pepper.

Well I am packing up the files so they can move to another building since this is my last day of work for the Education Counselor Support job. It was good work experience but the contract ended and it so is time to move on.

I am also finalizing my Grad School forms needed. I should start my program of study in Gerontology in the near future.

The longest English word:

The question of determining the longest English word inevitably boils down to defining what is acceptable as a word, since prefixes/suffixes can be adjoined to words to make longer words and because medical/chemical terms can get arbitrarily long. Further, most contenders for the honor of being the longest word are likely to be very rare in actual usage – so rare, in fact that they could be considered nonce words. The most common candidates for the crown, in my opinion, are
antidisestablishmentarianism (28 letters),
floccinaucinihilipilification
(29 letters) and
pneumonoultramicroscopicsilicovolcanokoniosis (45 letters).

The first is the only one of the three that was not specifically constructed for the purpose of being a very long word. It means opposition to the separation of church and state. The second, meaning the estimation of something as worthless, is the longest non-technical word in the OED. The latter, supposedly a lung disease, appears to be a semi-serious concoction.

First Game of Golf

Read this its really funny…

A husband takes his wife to play her first game of golf.

Of course, the wife promptly hacked her first shot

right through the window of the biggest house adjacent to the course.

The husband cringed, “I warned you to be careful! Now we’ll have
to go up there, find the owner, apologize and see how much your
lousy drive is going to cost us.”

So the couple walked up to the house and
knocked on the door.

A warm voice said, “Come on in.” When they opened
the door they saw the damage that was done: glass was all over the place, and a
broken antique bottle was lying on its side near the broken
window.

A man reclining on the couch asked, “Are you the people that broke
my window?”

“Uh…yeah, sir. We’re sure sorry about that,” the
husband replied.

“Oh, no apology is necessary. Actually I want to thank
you. You see,

I’m a genie, and I’ve been trapped in that bottle for
a thousand years.
Now that you’ve released me, I’m allowed to grant

Kheer (Indian Rice Pudding)-Fuzzy logic rice cooker only



This rice pudding is good warm or cold. It is creamy, smooth and not overly sweet. You can add nuts for crunch on the top when serving. Putting whipping cream on top is nice too. Traditionally kheer is made by boiling a little rice with lots of milk until the milk is reduced. The recipes vary on the amount of milk used and it take over an hour of almost constant stirring . The worst part is than you will always get milk residue stuck on the bottom of your pot. But if you have a fuzzy logic rice cooker you can make kheer with little fuss and then just wipe the rice cooker pot clean with warm soapy water. You can find rose water at gourmet stores or Indian or Middle Eastern Markets.

Fuzzy logic rice cooker only
Cycle: porridge
Serves 6 to 8

2/3 cups white basmati rice
4 cups whole milk
2/3 cup sugar
4 green cardamon pods
2 teaspoon rose water
1/2 cup heavy cream
1/2 cup raisins
2 tablespoons roughly chopped unsalted pistachios

Rinse the rice and drain well.
Place the rice, milk, sugar and cadamom pods in the rice cooker bowl. Stir briefly with a wooden or plastic rice paddle or wooden spoon. Close the cover and set for the Porridge cycle.

When the machine switches to the Keep Warm cycle, open the cover and remove the bowl. Let the kheer cool for a bout 30 minutes, stirring occasionally to prevent skin from forming on the surface of the pudding. Remove the cardamom pods. Stir in the rose water. Transfer the pudding to a serving bowl, if desired, and cover tighly with plastic wrap. Chill in the refrigerator until cool but not cold, about 1 hour. Whip the cream with an electric mixer until soft peaks form, Gently fold the cream into the pudding along with the raisin and most of the pistachios. Sprinkle a few chopped pistachios atop each servings.

aromatic kalijira rice pilaw


This rice pilaw or pilaf is made in different ways in different parts of India. This recipe is a traditional northern Indian method of making pilaw. This rice I am using for this recipe is imported from Bengal by Lotus Foods, and somewhat expensive. Kalijura rice is also called aromatic baby basmati rice. It is easy and fast to cook. You can cook it in ten minutes It is also a wonderful to make rice pudding with.

Fuzzy logic or on/off cooker
Cycle: quick cook or regular
Serves 4

2 cups kilijira rice
1 tablspon vegetable oil or ghee
2 samll while boildin g onions, finley chopped
2 1/2 cups water
1/4 teaspoon turmeric
3 cloves
3 green cardamon pods
one 4-inch cinnamon stick
1 teasppoon salt

Garnish (optional)

1 tabslpesppon vegeatble oil or ghee
2 tabslpoons silved blacnhed almonds
2 tabslpoons raisins

Place the rice in a fien strainer or bowl and ricne with cold water , rubbing with your hands to remove any bits of dust; srain

Set the rice cooker for the quick cook or regular cycle. Place the oil in the rice cooker bowl. When oil is hot , add the onions, Cook , stirring a few times until softened, about 2 minutes, Add the rice and cook, stirring a few times, until the rice turns opaque, aobut 5 minutes, Add the rice and cook, spice and salt, stir just to combine. Close the cover and rest for the regular cycle .

Make garnish, if using. Heat the oil in a samll skillet over mediun heat. Add the amonds and saute until they are golden brown, about 3 minutes. Remove the almonds with a slotted spoon and drain on a paper towel. Add the raisins to the some oil saute until they puff up , in about 1 minute or less. Remove and drain on paper towel.

When the machine switches to the Keep Warm cycle, fluff the rice with a wooden or plastic spoon or wooden spoon. This will keep warm for 1 to 2 hours. Serve hot, topped with almond-raisin garnish, if using.
