This is an easy Tex-Mex type of sandwich.

Serves 4

8 slices bread
1/2 cup guacamole
12 thin slices cooked skinless chicken breast
2 tablespoons chopped fresh coriander leaves (Cilantro)
ground black pepper

Spread 4 slices of bread with guacamole. Cover with slices of chicken, grind some black pepper over the top, then sprinkle with coriander. Cover each with a second slice of bread. Cut each sandwich in half to make 2 triangles and serve immediately.
