Kolachky

Ingredients:

2 sticks margarine or butter , softened
6 ounces cream cheese, softened
2 cups flour
1 (12-ounce can) pureed fruit filling or prepared filling
Powdered sugar, for garnish

Cream the margarine or butter and cream cheese. Add the flour a little at a time at low speed until mixed. Chill the dough in the refrigerate in plastic wrap. You can leave in overnight.
Divide dough in 4 pieces. Roll each piece into a 8 inch square. Cut into 2 inch squares. Drop 1 teaspoon of filling in center. Fold in corners and press to seal. Bake on greased cookie sheet at 375 F for about15 to 20 minutes. Sprinkle powdered sugar on top after it cools for garnish.

1 cup dried apricots
1 cup water
½ cup sugar
1 teaspoon grated orange peel
2 tablespoons orange juice

Cook apricot in water until tender. Add other ingredients. Stir and cool.

Overnight Egg and Sauage Bake



I took a biscuit recipe and modified it somewhat so it would be less spicy but still have flavor. This is started the night before so it makes a great breakfast or brunch meal for guests.

1 cup biscuit mix
1 cup shredded Cheddar
2 cups milk
2 teaspoon fresh cilantro, chopped
1 teaspoon ground mustard
6 eggs, slightly beatened
1 pound beef chorizo, cooked and drained
1 clove a garlic, minced

Cook the chorizo and garlic until cooked and let cool and drain.

Spray a 2 – quart casserole with cooking spray. Stir together all ingredients in a large bowl. Pour into casserole. Cover and refrigerate at least 8 hours but not longer than 24 hours.

Heat oven to 350 F and bake uncovered for one hour or until knife inserted comes out clean.

Serve with salsa.

Apparently someone wrote on some cargo in a ship that came into the Port Hueneme harbor a bomb threat. Nothing was found only the shipement of bananas which is a good thing.

Harmful Algal Bloom

Southern California is again experiencing what is commonly referred to as Red Tide but not all of the algae produce the red tide. Keep informed when going to the beach and if you are doing any sport fishing. The effect on Pelicans this week shows that it is starting to affect larger animals.

Bumbleberry Pancakes


Bumbleberry Pancakes use two berries for a wonderful flavor. It is great with maple syrup or you can use a fruit flavored syrup.

2 cups pancake mix
3/4 cups sour cream
1 -1 1/2 cups milk
1 egg
1/2 cup fresh or frozen (thawed and drained) raspberries
1/2 cup fresh or frozen (thawed and drained) blueberries

Heat griddle or skillet; grease or spay on oil if necessary.
Stir all ingredients except berries in large bowl. Some lumps are okay you do not want to over stir. Stir in berries gently. Pour batter of about 1/4 cups onto hot griddle. I use a ladle to do this.

Cook until edges are dry, turn: cook until golden.

Serve with syrup.
