2 fillets
All purpose flour
1/2 cup oil

Dip the pieces of fish in the flour; coating both sides.

Heat the oil in a large skillet that will hold all the pieces of fish. Place the fish in the hot oil and cook on each sideuntil fish flakes easily witha afork. Drain well with papaer towels and serve.

Tomato Rice Pilaf- Domatesli Pilaf

1 cup uncooked long grain rice
1 teaspoon salt
2 tablespoons butter
2 tablespoons vegetable oil
2 medium tomatoes, peeled and finely chopped
Freshly ground pepper
2 cups hot chicken broth

Soak the rice in a bowl with the salt and 3 cups of warm water for 20 to 30 minutes, then drain well.

In a saucepan heat thebutter and oil, add the tomatoes and saute for 4 to 5 minutes. Stir in the rice, mix well, add the salt and pepper to taste and the chicken broth. Mix well. Bring to a boil and then reduce heat to a simmer. Cook for 15 to 20 minutes or until the rice absorbed all the broth. Remove from the heat, place 2 layers of paper towels on this rice cover the pot and let set for 10 minutes in a warm place. Mix well with a wooden spoon.

Koy Usulu Tavuk-Turkey Chicken Casserole

2 Tablespoons vegetable oil
2 Tablespoons butter
2 medium onions finely chopped
3 cloves garlic, finely chopped
1/2 green bell pepper, chopped
1/2 red bell pepper chopped
4 ounces fresh mushrooms, wiped clean and sliced
salt
Freshly ground pepper
4 boned, skinned chicken breasts, diced in 1/2 inch squares
3 tomatoes, seeded and diced
1 teaspoon tomato paste
1 teaspoon red bell pepper paste
3 mediun potatoes, peeled and diced small
1 teaspoon thyme or oregano

In a 3-quart pot heat the oil and butter. Saute the onions, garlic and bell peppers, stirring over medium heat for 2 minutes. Add the mushrooms, salt and pepper to taste, and cook, stirring for 2 to 3 minutes. Add the chicken and cook stirring for 6 minutes.

Add the tomatoes, tomato paste, bell pepper paste and 23 cups water. Stir and mix well. Cover and cook for 15 minutes , stirring occastionally.

Add the potatoes and 1 to 1 1/4 cups water, thyme or oregano.. Mix well. Cover and cook, stirring occasionally., for 20 minutes.

Remove from heat and serve. It is wonderful served with rice and a green salad.

Used a regular cake mix to prepare the cupcakesand decortated with frosting, sprinkles and candy.

French Toast

When hungry for something a little special this is what breadfasters hope for. Plump slices of bread soaked in a rich bath of eggs and cream and sauteed to a honey-brown crispness. I like to use texas toast to make this recipe.

Whisk together in a shallow bowl:

2/3 cup milk, cream or half and half
4 large eggs
1 teaspoon vanilla
1/4 teaspoon salt
Any mixture of spice such as cinnamon, allspice, ginger, etc.

One or two at a time add;

6 slices of white or egg bread

Turn the slices in the egg mixture until it soaks mixture but not falling apart.

Heat 2 tablespoons butter or spray with oil

Add as many slice of bread to the skillet as will fit without crowing and cook until the underside is golden brown. Serve immediately to keep warm in a 200 degree F. oven while you finish the rest.

If desired dust with powdered sugar

Serve with:

Butter, Maple syrup
Ham, sausage or bacon, if desired

Roast Chicken with Curry-Rice Stuffing (Brathuhnchen mit Curryreis gerfullt)

5 pound roasting chicken
1/4 lemon
1 recipe Curry Rice
butter
salt
1 cup chicken stock
2 to 3 tablspoons sweet cream

Wash chicken well, pat dry and rub inside with a cut lemon. Make the rice until almost done. Stuff the chciken with the rice. Rub the chicken with butter and truss chicken. Sprinkle with a little salt. Pour 1 cup broth into pan. Place on roasting rack in roasting pan. Roast in 350 F oven for about 1 1/2 hours or until cooked. Remove from pan onto platter and bring juices to baiol and stir in 2 to 3 tablspoons cream. Heat for a minute or two but do not boil.

Curry Rice

1 tablespoon butter
2 tablespoons minced onion
1 cup converted rice
1 teaspoon curry powder
2 to 3 cups hot chicken broth, well seasoned

Melt butter in a 1 quart saucepan that has a cover. Saute onion into the butter until it softens and turns pale yellpw. Add rice and curry powder. Toss togetther and saute slowly for about 5 minutes. Add 2 cups hot chicken broth, bring to boil, cover and turn off heat and let set for 20 to 25 minutes or until tender. Do not over cook. The stock should be absorbed by the time the rice is done.
