Basic Skillet Meal

Ingredients:

Cooked Rice
(Optional Browned Meat)
Soup
Beans
Veggie
Cheese

Combine all ingredients and simmer in a large skillet until hot.

Aloo Ka Bhartha (Boiled Potatoes)

5 large potatoes, boiled and peeled
2 onions, chopped fine
2 green chilies, chopped finely
3 coriander leaves, chopped finley
1 tablespoon oil
1/2 teaspoon salt
1/2 tablespoon chili powder
1/2 teaspoon cumin

Place the potatoes in a large boil and mash them into large chunks. Add the remaining ingredients and mix well. Serve warm.

Today I felt like something simple yet warm for breakfast. This is what I came up with.

Make oatmeal according to pakage instuctions add currants at the end. Add brown sugar to taste. Pour milk or cream over top.

Ingredients:

1/2 cups shortening
1 1/4 cups sugar
2 eggs
1 teaspoon vanilla extract
1 1/4 cups ripe mashed bananas
2 cups all-purpose flour
1 1/4 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup Sour Cream
3/4 cups nuts (walnuts or other type)
confecioners sugar

In a mixing bowl cream the shorteing, vanilla extract and sugar. Add the eggs, one at a time, beating after each egg. Add bananas and mix well. Combine flour, baking powder, baking soda and salt. Add to the cream mixture with the sour cream. Stir in nuts . Pour into a greased pan . Bake a t 350 F for 50 minutes. Cool 10 minutes and then place on a rack . Dust with sugar.

You would usually use a ham bone for this recipe but I made it without meat in this recipe.

1 pound small dried red beans, soaked overnight and drained
1 onion, chopped
3 cloves garlic,minced
salt and pepper
6 cups hot cooked rice
1 cup chopped green onions (optional)
1 ham bone cracked (optional)

Place beans in crock pot and add remaining ingredients, except rice and green onions. Cover and cook on high for 4 hours. If you use the ham remove meat from the bone and return the meat to the pot. Mix and serve with rice and onions on top.

Hot Dog & Vegetable Stir-Fry

I used a large family size bag of vegetable sitr fry mix , cheap beef hot dogs and snow peas.

In a wok or large skillet put oil on high heat. Put the frozen stir fry vegetables and snow peas and stir fry for a few minutes or until crisp cooked . Add the cut up hot dogs and cook until heated. I made a sauce using two tablesppoons soy sauce, I tablesppon oyster sauce and 2 tablespoons corn starch in 1/4 cup water. Add to the veg and hot dogs and stir until thickened. Add more water if needed.

Sever over white rice or noodles.

Tater Tot Casserole

This is a popular recipe that has been around for a long time. I have seen all types of varations. It also freezes well.

1 1/2 lbs of browned and drained ground beef ( or turkey)
1 or 2 Family size cans of cream of chicken or Mushroom Soup
Bag of Tater Tots
Miniced onions

Brown the meat, drain. Put in sprayed dish. Mix soup and just enought water to thin over the ground meat. Mix in onions if desired. Put tater tots on top of casserole. Bake until hot and bubbly at 350 degrees F for around 30 minutes or so.

Serve with salad and buttered bread.

Variations:

Add 1 1/2 cups frozen peas
Add can of mixed veggies.

Turkey/Beef and Black Bean burgers with Enchilada Sauce

The bean dip makes a very moist patty. Turn the patties very carefully or they may fall apart because of the moisture.

1 lb. ground meat
1/2 cup black bean dip
2 tablespoons ketchup
Salt and ground pepper
Non-stick spray
1 can (about 10 oz. red enchilada sauce)
1/2 cups shredded Cheddar Cheese

Mix the ground meat, bean dip, ketchup and salt and pepper in a large bowl until blended. From into 4 burgers. Heat a large skillet over hight heat for several minutes. Spray the burgers with oil and brown on both sides.

Add enchilada sauce, reduce the heat to a simmer and until the sauce reduces to glaze, turning the burgers several times to glaze evenly and cook through. Top with the cheese; cover the pan and
cook until the cheese melts, 1 to 2 minutes.
