Beer Potato Salad and Sauted Peppers

I have to admit it took some bravery to try this potato salad I found in an old 1981 copy of the Los Angeles Times California Cookbook. I had in the back of my mind that this could actually taste pretty good but still was not sure since I am not fond of beer. Now I am now glad I tried this salad because it was a nice change from the normal potato salad I prepare. The biggest  surprise was that you really did not taste the beer but it added the sour tart taste you normally add with vinegar.  The Saute bell peppers were another simple addition for this steak meal. Packed with flavor the Garlic and bacon complement the tangy green peppers.


Saute Peppers


2 slices bacon, chopped
2 tablespoons oil, butter or margarine
2 gloves garlic
2 green peppers. sliced
1/4 cup rice vinegar
1/4 teaspoon beef or chicken stock base

Cook the bacon in a skillet until crisp. Remove the bacon and reserve in a small bowl. Add butter to the drippings. Add the garlic and saute a few minutes. Sir in green peppers and saute about 7 minutes. Reduce the heat and add the vinegar and stock base. Cook for about 7 minutes while stirring once in a while. Top with the reserved bacon and serve.

Beer Potato Salad

3 pounds potatoes
2 cups diced celery (about 4 stalks)
1 small red onion , finely chopped
1 cup olive oil mayonnaise
2 tablespoons prepared mustard
1 or two drops of hot pepper sauce

Cook potatoes in skin until tender. Cool in cold water. When cool peel and dice. Place into a large bowl with the celery and onion. Add salt to taste. In another medium bowl mix the mayonnaise, mustard, hot sauce. Add the beer gradually into the mixture. Pour over the potato mixture and toss with a fork being careful not to break the potatoes apart.
