To tell you the truth I do not have stuffed potatoes that often. I usually make baked fries, baked potatoes or mashed potatoes. Today  I had some ham and the other ingredients available  I needed  so I decided to bake some potatoes and make stuffed potato. Their really is not any measurements. You can make the potatoes as moist with the sour cream as you like and add the other ingredients as you feel best. I did add some leftover broccoli, carrots and cauliflower chopped into pieces and that worked out great. They would had looked nicer with some chives on top for contrast.

So these are the basic ingredients:


Diced ham

Sour cream

Green onions or chives

Swiss Cheese, grated




Wash the potatoes and dry and rub with oil if desired. Prick with a fork about 4 times each side. If you fail to do this you might end up with a potato explosion ( think popcorn). 

Make a 1/4 inch slice in the potato and scoop out the insides into a bowl leaving a thin layer of potatoes inside. Mash the potatoes and add the ingredients.

Beat well and re-stuff the potatoes. I added some cheese on top too. 

Put back into the oven until heated. You can put them under to broiler to brown.
