On the Central Coast of California is a Santa Maria, What began as a oil,  agricultural and Air Force town has now become the largest city in Santa Barbara County. It is now largely know for its wine and BBQ. It is the home of the Tri-Tip and Santa Maria Style BBQ. In real Santa Maria Beans the beans used are the pinquito beans. The small pink beans are commercially grown on the mesas above Santa Maria. Since the beans are not available in this area I substituted two cans of red beans. You could also use kidney or pinto beans instead.




2 cans small pink, red or pinto beans

1 slice bacon diced

1/4 cup diced cooked ham

1 small clove garlic, minced

6 oz can tomato sauce

1/4 cup red chile sauce or salsa

1 tablespoon sugar

1 teaspoon dry mustard

1 teaspoon salt


Cook the bacon and ham in a pan until light brown. Add the garlic and saute one to two minutes. Add the tomato sauce, chile sauce, sugar , mustard, and salt. Add the beans and heat until hot. Keep warm until ready to serve.
