Sometimes during the week you want to make your meal quickly. This recipe works because it has just a few ingredients and is make in the oven. To make it even easier use a favorite spice mix instead of the onion and pepper spices.

1 1/2 pounds cob, grouper or white fish

1 tablespoon lime

1/8 teaspoon onion powder

1/8 teaspoon black pepper

1/2 cups dutch rusk or any other type of baked bread made into bread crumbs

1 1/2 teaspoon butter

Preheat oven to 425º

Coat a 7 X 11 inch baking pan with cooking spray.

Place the fish and top with the lime juice. Sprinkle the spice and bread crumbs on top. Drizzle with the butter. Bake in the oven for 20 minutes depending on the thickness of the fish.
