This is another easy and less expensive meal for the budget. You can go lots of ways with this by adding other ingredients like corn or adding more meal. To keep the costs down I used one pound of ground beef. This meal will last 2-3 meals for us three.



Cowboy Casserole

1- 2 pounds ground beef
1 onion diced or 1 teaspoon of onion powder
1 green or red onion diced
2 cans of pinto, black or navy bean (1 quart), drained
1 teaspoon of chili powder
1 16 oz. can diced tomatoes
Corn bread mix or you favorite corn bread recipe.

Saute onion and green peppers in a pan for 1 minute at medium temperature. Add ground beef and cook until no lower pink. Add the beans, chili powder and tomatoes. Cook until heated. Pour ingredients into a casserole dish. Top with corn bread mix. Bake at 350F. until corn bread is cooked and brown on top. This should be about 12-20 minutes. Remove from oven and serve.
