IMG_8603The eggplants did very well this year in the garden and this is one recipe I really like that I discovered this year. You can add about a 1/4 cup of cheese to the mixture too.

Eggplant Croquettes

1 eggplant
1 green pepper, chopped fine
1 egg, well beaten
1/2 cup bread crumbs
1/4 cup shredded cheese
2 teaspoon salt
1 teaspoon parsley
Flour

Peel the eggplant and cut into cuts. Cover with boiling water and cook until tender. Drain. Place into a bowl with onion, green peppers, beaten egg, bread crumbs, salt and parsley. Mix well.

Form into patties and fry in a little oil on medium making each side brown. Remove from the pan and serve as is or with a sauce.
