ImageWhen I was preparing this dish I was asked what I was making and they thought I was making a meat loaf with no meat but a Faux meat loaf made with potatoes. The dish has potatoes on the bottom with meat loaf on the top. The juice from the meat loaf coat and flavor the potatoes. This dish is supper easy and children love it too.  Our side dish was  Succotash (corn and lima beans) but a dark green vegetable and salad would go great with this meal. I suggest putting foil over the casserole until the end or put foil on the last 15 minutes to prevent burning of the catsup and help the potatoes to cook.  For the individuals that do not like messing with onions or dry onions for cooking the added that choice in the recipe. I have not tried it but frozen or dried potatoes (reconstituted) should both work great with this recipe. I did not measure the 8 oz. canned milk but just poured it in the whole can. It worked great.

Potato Meat Loaf

4 cups potatoes, thinly sliced
1 teaspoon of chopped onions or 1/2 teaspoon onion powder
1 teaspoon salt
1/8 teaspoon ground pepper
1 pound ground beef
3/4 cup evaporated milk
1/2 cup chopped onions  or 1/4 cup chopped dried onions
1/4 cup bread crumbs
1 teaspoon salt
1/8 teaspoon ground pepper
Catsup (ketchup)

In a bowl mix the potatoes, 1 teaspoon onion, salt and pepper. put into a 2 quart greased or oil baking dish. Combine the ground beef, evaporated milk, onions, bread crumbs, salt and pepper. Add on top of the potatoes. Add a thin layer of catsup. Bake at 350 degrees F. for an hour or until the potatoes are tender.
