Tater Tot Casserole
This is not a recipe I make very often due to the amount of salt in the soup and tater tops. It is great for a really quick meal since it is very easy and quick. The perfect meal for the week night meal when you have a family and so little time or this time of year when craving a comfort food. If you have some browned meal in the freezer or canned it will be even quicker.
2 pounds extra lean ground beef
1 can cream of mushroom soup
1 cup grated cheddar cheese
1 (2 pound) package frozen tater tots
Brown the meat, drain. Put in sprayed or greased dish. Mix soup and just enough water to thin and then pour over the ground meat. Mix in onions, if desired. Cover with a layer of shredded cheddar cheese. Put tater tots on top of casserole. Bake until hot and bubbly at 350° F for 30 minutes or so.
Serve with salad and buttered bread.
Add 1 1/2 cups frozen peas
Add can of mixed veggies.
