chicken and rice

 

Today I made a traditional casserole but using the instant pot. This made this one pot dish ready in minutes. This dish was part of my meal and the casserole does have a protein (chicken), starch (rice) and vegetables (broccoli). I added a muffin and orange to add more nutrients and make the meal more fun with different textures and tastes.

Ingredients:

1 tablespoon olive oil

2chicken  thighs and legs, cooked and cubed ( you can cook raw cubed chicken with the onions until lightly golden).

1 onion, finely diced

1 1/3 cups white rice

1 1/2 cups chicken broth

1/4 teaspoon garlic powder

1/4 teaspoon turmeric root- optional for color and nutrition

1 1/2 tablespoons all-purpose flour

1/2 cup milk

1 1/2 cups shredded cheddar cheese

2 cups frozen broccoli, thawed

Directions:

Without the lid on set the instant pot to sauté. Add the onion and sauté until translucent. Add the chicken , rice , broth, and seasoning. Put on the lid on and put manual, set 5 minutes on high pressure.

When do a quick release. Whisk together the flour and milk. With the lid off set  to meat/stew. Cook for 2 minutes Stir in the cheese and broccoli and cook for 2 more minutes.
