Mexican Scrambled Eggs

Some times we all need a change of pace from our normal scrambled eggs. This is a simple way to make you scrambled eggs Mexican style. This recipe is great  for breakfast and even an evening meal. Serve the eggs with beans and tortillas for a balanced meal. Using a cast iron frying pan and serve them right out of the pan for a one less bowl to clean meal. I double the recipe and make the one serving three eggs for dinner.

Ingredients: 

Cooking oil

2 tablespoons salsa

Two eggs scrambled

1/2 cup cheddar cheese
 Directions:

Lightly oil a small omelet pan on medium high. Put into the pan about 2 tablespoons of salsa.  Next place two scrambled eggs into the pan and cook until almost done. Add ¼ cup of cheddar cheese on top and place a lid on top. Cook until cheese has melted.
